CHEDDAR CHICKEN AND RICE SKILLET DINNER

½ cup zesty Italian dressing
1 large can chicken breast chunks
2 cups brown rice, uncooked
1 ¼ cups chicken broth
2 cups small broccoli florets
1 can rotel, drained
1 cup shredded cheddar cheese

Heat dressing in non-stick skillet on medium-hi heat. Add chicken, cook 2 minutes.
Stir in rice, broth, and broccoli; bring to boil; cover. Reduce heat to low; cook 5 minutes until rice is tender. Let stand covered 5 minutes or until liquid is absorbed.
Add drained rotel, cheese, and onions; stir until blended.
